Ingredients

Serves: 8-10

  • 150g any flour
  • ½ teaspoon baking powder
  • 2 large eggs, room temperature
  • 100g Brown sugar
  • 75ml any milk, room temperature
  • 50g butter, melted.
  • 2 tsp vanilla paste
  • 2 tsp cinnamon powder
  • 1gg Bramley apples, thinly sliced.

Crumble

  • 100g oats
  • 30g butter, diced.
  • 2-4 tablespoons brown sugar
  • 1-2 teaspoon cinnamon powder
  • pinch of sea salt

Method

  1. Pre-heat oven to 180°C
  2. Add all dry ingredients into a bowl and mix well until fully combined. Set aside.
  3. Wet ingredients, add eggs and sugar into another bowl and whisk until pale for around 5 minutes (using an electric whisk). Then add in the rest of the wet ingredients, mix well.
  4. Fold in dry ingredients and mix everything until fully combined. Set aside.
  5. Peel and remove the core of the apples. Slice each Bramley apple as thin as possible. Place slices into a large bowl.
  6. Pour the batter into the bowl with apples. Gently fold everything well with a spatula. Make sure each apple slice is coated with the batter.
  7. Spoon the batter mixture into a loaf tin, lined with grease proof paper (or small cake tin), arranging the apple slices. Make sure to spoon the batter in between and lightly press to accommodate everything. Set aside.
  8. Cinnamon Oats Crumble, add all ingredients into a bowl and mix well using a spoon. Sprinkle evenly on top of the apple mixture.
  9. Bake in a preheated oven at (175ºC) on lower rack, for 60-70 minutes or until a skewer inserted in the centre comes out clean. Remove from the oven, leave for 10 minutes before removing the cake out of the tin.
  10. Cool completely before slicing. Enjoy with some warm custard or cream!
