Ingredients
Serves: 4
- 4 burger brioche buns
- Pickles/ gherkins, sliced onions, lettuce.
- 8 slices mature cheddar (to preference)
- Chopped onions
- Pickled jalapeño peppers (optional)
- 800g ground beef (brisket/flank)
- Sea Salt and pepper from the mill
- Mayonnaise, ketchup & mustard
- Butter for frying
Cheese Sauce
- 150 ml cream
- 200 g cheddar cheese (Edam, Emmental, Calvita).
- Sea salt & white pepper
- Smoked paprika
- Greaseproof paper
Method
- For the sauce, cut the cheese into cubes and let it simmer briefly with the cream, vigorously whisk all the ingredients together with a pinch of sea salt, white pepper & paprika. (You could add finely chopped chilli or crispy bacon bits to the sauce).
- Cut the brioche buns in half and toast them on your frying pan.
- Let a knob of butter foam in a pan.
- Place the meat balls on top, place greaseproof paper on each and smash them out completely, evenly thin, let a crispy crusts form and turn over, place 2 slices of cheese on each and let the other side also crisp up nicely until the cheese has melted, put a lid on it if necessary.
- Spread mayonnaise, mustard and ketchup on the bottoms of the buns.
- Place the crispy smashed burgers with melted cheese on top, finish with slices of onion, jalapeño, pickles & lettuce.
- Finally pour the melting cheese sauce on top. Place the top of the brioche bun and enjoy every single bite!
