Ingredients

Serves: 4

  • 4 burger brioche buns
  • Pickles/ gherkins, sliced onions, lettuce.
  • 8 slices mature cheddar (to preference)
  • Chopped onions
  • Pickled jalapeño peppers (optional)
  • 800g ground beef (brisket/flank)
  • Sea Salt and pepper from the mill
  • Mayonnaise, ketchup & mustard
  • Butter for frying

Cheese Sauce

  • 150 ml cream
  • 200 g cheddar cheese (Edam, Emmental, Calvita).
  • Sea salt & white pepper
  • Smoked paprika
  • Greaseproof paper

Method

  1. For the sauce, cut the cheese into cubes and let it simmer briefly with the cream, vigorously whisk all the ingredients together with a pinch of sea salt, white pepper & paprika. (You could add finely chopped chilli or crispy bacon bits to the sauce).
  2. Cut the brioche buns in half and toast them on your frying pan.
  3. Let a knob of butter foam in a pan.
  4. Place the meat balls on top, place greaseproof paper on each and smash them out completely, evenly thin, let a crispy crusts form and turn over, place 2 slices of cheese on each and let the other side also crisp up nicely until the cheese has melted, put a lid on it if necessary.
  5. Spread mayonnaise, mustard and ketchup on the bottoms of the buns.
  6. Place the crispy smashed burgers with melted cheese on top, finish with slices of onion, jalapeño, pickles & lettuce.
  7. Finally pour the melting cheese sauce on top. Place the top of the brioche bun and enjoy every single bite!
